I purchased this a number of months ago but just recently used it. I like the compact design and the deep cavities for filling with ganache. I was hoping the professional-type polycarbonate molds would be easier to de-mold the chocolates, but I actually found it difficult to get the candies out. The sturdy plastic does not allow for much give when twisting to de-mold. Even placing it in the freezer for a short time didn't help. I use high quality Belgian chocolate, not those chocolate flavored disks. If anyone has tips on how to get them out more easily, it would be appreciated. If not for that, I would have rated the product higher as everything else about it is great.

I love these heavy-duty polycarbonate molds! This one will be filled with either Bailey's Irish Cream Caramel or a Jamison's Irish Whiskey ganache. As a professional pastry chef/chocolatier I look for quality products that can take a fair amount of abuse in my kitchen. This mold will take years of use and is also reasonably priced. I will definitely be purchasing more.
